Gather eggs, shredded potatoes, cheddar cheese, swiss cheese, cottage cheese, diced onions, bacon and salt and pepper.

Substitutions

This cheesy breakfast casserole is as easy to make as it is delicious. Here are my recommended substitutions if you need them.

  • Eggs: This breakfast casserole uses 6 large eggs. You can also use 7 medium eggs or 5 extra large or jumbo eggs.
  • Cheddar Cheese: Use your favorite sharp or mild cheddar cheese. I highly suggest buying a block and grating it your self, rather than buying pre-shredded cheese.
  • Swiss Cheese: If you don’t like swiss cheese, use a mild white cheddar, provolone, munster or even mozzarella cheese.
  • Cottage Cheese: I recommend using one that is 4% fat. I love the cottage cheese from Trader Joes. If you don’t like cottage cheese, ricotta cheese works well as a substitute.
  • Onions: Feel free to use shallots or omit this ingredient from the dish.
  • Bacon: Use any meat you like or omit the meat if you prefer. Italian sausage, regular sausage, chorizo, vegan or meat substitutes also work well in this breakfast casserole.This egg and hash brown casserole dish can also be made with no bacon.
  • Shredded Hash Browns: I prefer using a bag of simply potatoes shredded hash browns. Feel free to use your own favorite brand. For a boost of veggies and for something a little different, you can try sweet potato or root veggie hash browns.

  1. Preheat the oven to 350 F (177 C) for 20 - 30 minutes if baking right after assembling the cheesy breakfast casserole. Grease a 9 x 13 oven safe casserole dish. In a medium skillet, cook the bacon and onions over medium heat for about 6 minutes or until the crisp and the onions have soften. Remove from the heat to cool to warm before using in the egg mixture.
  2. In a large mixing bowl, whisk the eggs to lightly beaten. Carefully stir to combine the hash browns, cheddar cheese, swiss cheese, cottage cheese and salt and pepper. If you are adding in veggies or dried herbs, stir those ingredients in at this time. Stir in the cooked and cooled bacon and onion mixture to well combined.

  1. Transfer the egg, cheese, bacon and potato mixture to the prepared baking dish. If baking later, tightly cover the dish and transfer to the fridge to chill for up to 24 hours. Or bake the dish for 40 - 50 minutes or until the edges are set and the top is a beautiful golden brown. The internal temperature should read 160 F on an instant read digital thermometer.
  2. Cool the gooey cheesy Amish egg casserole for 10 -15 minutes. If you would like to top with fresh herbs such as thyme or oregano, slice and serve.

How To Make Ahead, Store, Freeze, Thaw and Reheat

  • Store baked breakfast casserole: Fully cool the bacon, egg and cheesy potato casserole to room temperature. Cover the casserole with plastic wrap or store in an airtight container in the fridge for up to 3 - 4 days.
  • Store unbaked breakfast casserole: Fully cook and cool the meat and onions. Mix all the ingredients together as written in the recipe, cover and store in the fridge for up to 24 hours. Remove from the fridge to sit out at room temperature while the oven preheats (about 20 - 30 minutes). Or fully assemble the Amish egg bake casserole, cover tightly in a freezer proof container and freeze for up to 3 months.
  • Freeze: Make sure the dish or slices of the Amish potato casserole are room temperature. Wrap or cover with freezer safe material. Store in the freezer for up to three months.
  • Thaw: Transfer the entire casserole dish to thaw overnight in the fridge. Pull out the dish to sit at room temperature for 20 - 30 minutes before baking. If baking an unbaked casserole for breakfast, make sure to bake for the entire time listed in the recipe.
  • Reheat: Bake the baked and thawed dish in a 350 F (177 C) oven until warmed though or slice into pieces and heat through in the microwave.

    Made this today...came out great! Will definitely try this again...may have overcooked it cause it wasn't as "cheesy" as I expected...but that was on me...may use pepper jack cheese and another "spicy" cheese...hot sauce on it was good too!
